Animal Products Group

The Animal Products Group aims to measure and understand the quality of animal products, in particular meat.
Our purposes for measuring the quality of meat are (1) to help farm producers, distributors, and consumers to understand quality with the same criteria and to trade fair, and (2) to improve meat quality through breeding and rearing techniques. For these purposes, our research target includes the retail meat, primal cuts, carcasses, and living animals.
In order to clarify and improve meat and carcass qualities, the main issues we have to solve are "what should we measure" and "how can we measure". We employ a wide range of measurement techniques, including chemical analysis, biological methods, optical and image analysis, sensory evaluation, and consumer surveys.
Our research outcome contributes to the development and sustainable growth of production, distribution, and consumption of meat and other animal products.
