In order to realize "Society 5.0" in the field of agriculture and food industry, it is necessary to make food supply chains smarter, which are series of process from production to consumption. In other words, it is essential to build "smart food chain system". The key to this smart system is the digitization of information on food quality and safety, and the development of needs-oriented technologies and products based on the data. Hence, in the Division of Food Quality and Safety Research, we are developing analytical technologies that scientifically evaluate the quality and safety of agricultural and food products at the distribution, processing, and consumption stages. We are also developing distribution and utilization technologies that can provide agricultural and food products that meet market needs. Through technological development that will lead to the construction of the smart food chain system, we will contribute to the provision of high quality and safe food to consumers and the development of Japan's agriculture and food industry.
